Salsa Chicken![]()
1 small onion, diced
1/2 green bell pepper, diced
2 tablespoons olive oil
1 pound chicken (boneless, skinless chicken thighs or legs)
2 cups of salsa
1 pound greens (chopped spinach works well)
3 cups cooked brown rice
Heat oven to 400 degrees. In a large oven safe pan saute onion and bell pepper in oil about 3 minutes. Next add chicken and brown rice on all sides. Stir in salsa and grenns, then cover pan, reduce heat, and cook about 15 to 20 minutes until chicken is well done.

Beef Stroganoff![]()

2 pounds beef round steak
2 tablespoons olive oil
1 onion, finely chopped
6 mushrooms, sliced
1 large can tomato sauce
salt and pepper to taste
1 pint low fat sour cream
Cut round steak into thin 1 inch strips. Brown onions and round steak.
Add mushrooms and cook for 2 minutes (you may need to add extra oil since mushrooms tend to soak up oil). Add tomato sauce, salt and pepper and stir well. Pour into a 9X13X2 inch casserole dish and cover with foil. Bake in a 300 F degree oven for 30 minutes. Remove the foil, add sour cream, and stir. Serve over rice.

1 pound ground beef
1/2 cup frozen peas
1/2 cup frozen corn
1 can cream of potato soup
1 can cream of onion soup
Frozen tater tots
Grated cheese
Brown ground beef in pan and drain. In a 9X13 casserole dish mix browned beef, peas, corn, cans of soup and a handful of cheese. Top with a layer of tater tots and bake at 350 F degrees until tots begin to brown. Then add a layer of cheese and cook until bubbly.

1 package tortillas
Cold cuts, sliced from the deli (ham and turkey)
American cheese
Swiss cheese
Chopped veggies (lettuce, cucumbers, pickles, olives)
Mustard and mayonaise
Lay a tortilla out flat and spread with mayonasie, then mustard. Then layer with a slice of ham and a slice of turkey. Next add a slice of American cheese and a slice of Swiss cheese. Add lettus, olives, cucumbers, and pickles. Roll up your wrap and cut into round bite-size pieces. Pack in an air tight container. Simple to make and great for school lunches!

Pudding and Pie in a Pan![]()

CRUST:
1/2 cup chopped pecans
1/2 cup butter
1 cup flour
Mix well and put in bottom of a 9 x 13 inch pie pan. Next bake at 325 F degrees for 20 minutes.
FIRST LAYER:
8 ounce cream cheese
1 cup icing sugar
8 ounces Cool Whip (half of a 16 ounce container)
Mix together and pour into pie crust.
SECOND LAYER:
1 small package chocolate pudding
1 small package instant vanilla pudding
3 cups milk
1 teaspoon vanilla extract
Beat together and spread over the first layer. Then spread the other half of the Cool Whip on top of the second layer.
Grate chocolate over garnish or decorate with chocolate chilps.

1 banana
1/4 cup milk
3 or 4 ice cubs

2 cups yogurt, any flavor
3/4 cup frozen concentrated juice, thawed
Combine & freeze. Use popsicle forms or 3 oz. paper cups & popsicle sticks. Let freeze 1 hour before putting in sticks.

1/2 cup sugar
3 1/2 cups milk
1/2 tsp vanilla
Cook until comes to a boil. Pour into popsicle forms & freeze.

4 serving size instant chocolate pudding
1 large banana sliced
1 cup mini marshmallows
Combine milk & pudding, beat 1-2 min. Add bananas & marshmallows. Freeze.
